Description
Prosciutto Toscano DOP Boneless Approx. 17lb.Â
Prosciutto Toscano DOP is a delectable, cured ham that hails from Italy, specifically the Tuscany region. It is produced according to the strictest standards. DOP stands for “Denominazione di Origine Protetta,” which translates to “Protected Designation of Origin.” As the name implies, this certification confirms that products are locally grown and packaged. It offers a promise to the consumer: a guarantee that the food is produced by local farmers and artisans employing traditional methods.
The flavor profile of this ham is distinct and sets it apart from others; it is moister and more tender, offering a nuanced taste that is uniquely Tuscan. The production process begins with salting, incorporating not just salt but also pepper, garlic, juniper, myrtle, and other spices indigenous to Tuscany. Following the initial salting, the legs are refrigerated for two weeks before a second salting is applied. Subsequently, a three-month cold drying phase ensues. The final stage is the maturation process, lasting at least 16 months. To conclude, the crown is encrusted with black pepper, bestowing upon these esteemed hams their characteristic rustic look.
It pairs wonderfully with traditional Tuscan bread (known as “pane sciocco”), which is unsalted.
